Our story begins with the meeting between a Parisian city-dweller and a man fascinated by the Earth, native of Extremadura, Spanish authentic region. Then the will comes to become known an olive oil exceptional, sun-kissed and printed by traditions. This organic olive oil, top of the range, extracted under cold conditions and not filtered, is ecologically made, in a craft Mill without any chemical additive. A flavor apart
Our estate “Dehesa La Granja” lies in the heart of the “Extremadura” one of the most authentic regions of Spain, situated to the northeast of Caceres and surrounded by the mountains of Sierra de Gata.
In this exceptional region, where the micro-climate and the quality of the soil support lush vegetation; a very special variety of olive is grown: the “Manzanilla Cacerena” which produces an oil of outstanding taste.
Our plantation of 15,000 one-hundred-year old olive trees has become the habitat of a rare breed of stork: the black stork (Cigüeña Negra), which can be seen throughout the groves.
Farming on a human scale
Our strength comes from farming a manageable area of land, where our methods enable us to produce an organic oil of the highest quality while fully respecting the environment.
Our olive groves are tended using organic farming methods, which are gentle on the fruit and enable us to choose the ideal moment to pick the olives – the determining factor for flavor, scent and quality of the oil extracted.
The two periods of picking are distinguished by two different products: Frutado oil (olives harvested between mid-November and mid-December) and Intenso oil (olives harvested exclusively during the second week of November, the optimum time for picking in terms of quality but with a very low yield).
Traditional production techniques
Our oil is produced in a traditional mill, specially adapted for small quantities, and without using any chemical products or organic solvents; thus ensuring its purity. We use a cold extraction process without filtration.
This traditional and organic production process enables us to preserve all the properties of the Manzanilla Cacereña olives without altering the quantity of essential fatty acids, vitamins, antioxidants and other natural elements essential to good health.
A unique taste
The uniqueness of the variety of olive we use - the Manzanilla Cacereña - together with our 100% ecological farming and production methods make our single-variety oil an exceptional product. Slightly sweet, this olive oil is exactly the right balance between spicy and bitter notes. Its unique fruity taste has a very mild aroma due to the extremely low acid level (0.1%)
